Day 2 of GTCO Food and Drink Festival Spotlights African Cuisine with Chef Tilly’s Masterclass on Healthy Eating


Lagos, Nigeria – The second day of the ongoing GTCO Food and Drink Festival 2025 opened on a rich and inspiring note with a standout masterclass by Chef Tilly Ramsay, who took attendees on a flavorful journey through the diverse world of African cuisine — with a modern, health-conscious twist.

Titled “African Flavours for a Healthier You,” the session drew a large crowd of food enthusiasts, culinary students, nutrition advocates, and families eager to explore how traditional African dishes can be both nutritious and delicious.


With an energetic and engaging presence, Chef Tilly demonstrated how time-honored ingredients and cooking techniques from across the continent could be adapted to suit modern dietary needs without compromising on taste. From millet and fonio to native vegetables, spices, and lean proteins, the class emphasized natural, locally-sourced ingredients and their health benefits.

Chef Tilly highlighted the importance of reviving African food culture in a way that promotes wellness. “African food is incredibly diverse, rich in nutrients, and steeped in heritage,” she noted. “We don’t need to sacrifice our identity to eat healthy. Audience members not only tasted these innovative meals but also participated in a Q&A session, where Chef Tilly addressed common myths about African food and provided tips on how to adapt home cooking habits for better health outcomes.
